Do tour operators really influence where guests stay?

Constantly, and usually for free. Guests ask the operator where to stay before and after the tour and follow the answer, because the operator is the only local expert they have contact with. That recommendation currently ends in a link to a booking site.

Does this work for single-day experiences?

Yes, when the guest travelled in for it. A day tour that people drive two hours to reach often produces a night on either side of it, and the booking confirmation is the moment that decision is live.

What if we already have a hotel partner?

Most operators have one or two, which covers a fraction of what guests actually book and nothing at all outside those properties' availability. Broader coverage does not have to replace an existing arrangement; it catches the guests those properties turn away.
